Usually, Quelaag's Furysword is the weapon you want for there and to supplement your lightning rapier and magic weapons. That will require 11 str, 13 dex. WebMage can be kinda difficult, owing to the limited magic uses allowed per spell. But aimed well, with enough attunement and int, it can absolutely destroy any boss from afar. Cutting off a Seath's tail will land you an OP int weapon, though it's pretty mid-lateish game. Normal PvE could be challenging.
